Summer dish: Quinoa Patties on Hi Lovely!

I could eat quinoa ALL day EVERY day. The first part of the week my husband and I go vegitarian so quinoa is a staple in our household. It’s hard for me to think up off different dishes every week but pinterest really helps.

This quinoa patty recipe is great for large parties, appetizers and paired with a delicious summer salad! The quinoa patties can be made smaller or bigger depending on how you’re serving and how many people are there to serve!

Instructions
  1. Preheat oven to 400.
  2. Cook the quinoa as directed until fluffy. I use my rice cooker. SO much easier.
  3. After quinoa is cooked place all ingredients in a bowl and mix together. Using your hands is the best way. (Similar to making hamburger patties.)
  4. Once evenly mixed and mashed, form patties with your hands in the desired size. Flatten as you place them on a greased cookie sheet.
  5. Bake for 16-18 minutes. If not brown by then, broil for 2 minutes. Enjoy!
