Hi Lovely Cooks: A Twist on Quesadillas

Quesadillas are pretty much the best (and easiest) invention ever. I’ll eat them any day. My husband and kid will too. (Which never happens…) So here’s a recipe with a little twist on the normal quesadilla. Hint: It involves Price*s Cheese.

These quesadillas are a summer staple for us. SOOO easy to make and you can customize them to different requests. Add chicken fajita meat or beef fajitas for a hearty and delicious quesadillas or just plain Price*s pimento. You can make them ahead of time and heat up for a party later. Enjoy!

- 1 12 oz tub Price*s Pimento Cheese
- 3 jalepenos fresh
- 6 homemade tortillas
- 1 cup cherry tomatoes (or substitute diced tomatoes)
- 2 limes for garnish
- 1 cup salsa for dipping
Ingredients

- Place tortillas on the counter or large cutting board and top each with pimento cheese.
- Add sliced jalapenos and tomatoes.
- Place remaining tortillas on top to make quesadillas.
- Heat large nonstick skillet. Add the quesadillas and cook until crisp, about 3 to 4 minutes per side.
- Slice into quarters, squeeze a bit of lime juice and serve immediately.
